The Strada S is the second generation of La Marzocco's Strada. La Marzocco designed the original over two years with thirty coffee professionals it called the "Street Team", and named the machine for them (strada is Italian for "street"). The new generation updates the features and the look and keeps the low profile: customers can see the barista, and the barista gets an open, roomy work area. Each group has its own saturated boiler with PID control, so each group's brew temperature can be set on its own.
Choose auto-volumetric (AV) or AV with Scales (La Marzocco's ABR, Auto Brew Ratio). The AV version brews programmed doses, and its drip tray height adjusts so tall to-go cups fit. On the Scales version, scales built into the drip tray stop each shot by weight, and La Marzocco's Drip Prediction algorithm makes shots more accurate.
For pressure profiling, see the La Marzocco Strada X, the Strada with its own variable-pressure pump on every group.
