The Strada X is the pressure-profiling Strada, which La Marzocco calls the culmination of its espresso technology. Each group has its own boiler and its own variable-pressure pump, so every group can run a different pressure profile at the same time, and scales in the drip tray tie each profile to a target beverage weight. Smart Saturation automates pre-infusion: the machine wets the puck at low pressure and senses when it is fully saturated before raising the pressure, which La Marzocco says makes each shot behave like the one the barista dialed in.
There are three ways to brew. In Manual mode the barista moves the paddle between 0 and 12 bar and shapes the profile while the shot runs; Profile mode runs a saved profile when the paddle is engaged; AV mode brews at a set pressure to a target weight. It comes in two versions: the X, with straight-in portafilters, and the XT, with traditional twist-lock portafilters. La Marzocco builds the XT as a special-order, factory-custom machine, so it takes longer to arrive; ask us about timing for either version. Like the Strada S, it has a low profile that opens the bar to customers and gives the barista a roomy work area.
For the Strada with programmed doses or scales instead of pressure profiling, see the La Marzocco Strada S.
